The career

The opportunity

Book your admissions call

Every serious restaurant needs someone who can run a wine list, talk to a guest about a bottle and turn a dinner into an evening. Head sommeliers at top restaurants earn $70,000 to $120,000+, before the share of wine sales most houses pay on top.

The problem? The path in is a mystery.

Culinary schools train cooks. Hospitality degrees train hotel managers. Exams test what you know, not whether you can stand at a table on a Saturday night. You either learn on the floor from someone generous, or you never get the chance.

We built the floor into the program.

The case for it

Why this works

Taste is a human skill

A guest wants a person who listened, remembered their last bottle and read the table. That trust is the job, and it can't be automated.

No palate required to start

Nobody is born with one. We train tasting like a language: structure first, vocabulary second, confidence last.

A trade that travels

New York, Napa, London, Tokyo, a cruise ship or a ski resort. Good wine service is needed wherever people celebrate.

Restaurants are short

Fine dining has been short of trained floor staff for years. The houses that care about wine hire the people who are ready.

The founders

Who we are

Ardent was founded in Napa by people who spent their careers on restaurant floors and in cellars, not in classrooms.

We trained our first sommeliers the old way: one apprentice at a time, beside us at service. After a dozen of them, we wrote down the method and turned it into a program.

We now open 12 places per cohort, four cohorts a year.

The curriculum

The Ardent program

12-week intensive, online and on the floor.

  1. Weeks 1-3

The structure of wine. Grapes, regions, how a wine is made and why it tastes the way it does.

  2. Weeks 4-6

Tasting with a method. The grid, blind tasting twice a week, building a memory you can trust.

  3. Weeks 7-9

Service. Decanting, pairing, the order of a table, selling a bottle without selling.

  4. Weeks 10-12

The list and the job. Pricing, buying, cellar management, then two weeks of supervised service.

After graduation, you walk in ready to work.

You leave with a certificate, a tasting record of 200+ wines, and introductions to our partner restaurants in Napa, San Francisco and New York. Hiring stays their decision, but they meet you first.

Who it's for

Ardent is for you if…

This is for you

You love food, people and a good evening. You want a career with craft in it, not a desk. You remember details. You can stay calm when the room is full. You're ready to commit 12 weeks seriously.

Not for you if

You want a hobby course to impress friends, you can't work evenings, or you dislike talking to strangers.

We select for attitude, not knowledge.

Four steps

Decision within 48 hours, with the start date of your cohort.

  4. Step 4

Graduate after 12 weeks, ready for your first floor role.

FAQ

The questions people ask.

No. Weeks 1-3 start with the structure of wine: grapes, regions and how a wine is made. We select for attitude, not knowledge, and nobody is born with a palate.

Treat it as a serious commitment for 12 weeks. Lessons run online alongside two blind tastings a week, and the final two weeks are supervised service, scheduled like real evening shifts. We'll walk you through the exact weekly schedule on your admissions call.

We can't promise one, and nobody honest can. You graduate with a certificate, a tasting record of 200+ wines and introductions to our partner restaurants in Napa, San Francisco and New York. Hiring stays their decision, but they meet you first.

Ardent is built for the floor, not for one exam. The theory, the tasting grid and the service work cover a lot of what certification exams test, so it is a strong foundation if you choose to sit one later. Ask us on your call which path fits your goals.

At our academies in Napa and New York, and on the floor of our partner restaurants during the supervised service weeks. Addresses are at the bottom of this page.

Yes. We go through tuition and payment options with you on the admissions call, before you commit to anything.
